Federal Law States - A certified Food Safety Manager shall be on duty any time food is being prepped or served for public consumption.
It is recommended that each establishment have more than the one mandatory Food Safety Manager on staff because it is difficult for manager to always be available.
We recommend certification of one chef or cook per shift and all managers. A food safety managers certification is above a food handler card, so a food safety manager does not additionally need to carry a county food handler card.
